If you must use pre-ground malt is should be used as quickly as possible. Ground malt has a much greater surface area, and many of the kernel components are exposed to the atmosphere. Oxidation is increased rapidly as a result. Ground malt is much more attractive to insects as well.

We would recommend carrying no more than one month worth of inventory when using ground malt if at all possible. You may store ground black malt longer.
