Try 3% hydrogen peroxide with everything turned off.
Rinse thoroughly w/ distilled water prior to use.

To the best of my knowlege pH probes have a porous ceramic disk or membrane that allows ions to pass through probe and the solution you are measuring. This makes it very difficult to chemically sanitize pH probes. There are pH probes specifically made to be heat sanitized and cleand in place for use in bio-process and pharmaceutical industry. In any case I doubt your probe is approved by NSF or FDA for "food contact" otherwise it would have come with sanitization instructions. These probes can be filled with all kinds of nasty chemicals, heavy metals not to mention they soak in potassium chloride when not in use. Just take a small sample, check the pH and throw it out, thats pretty standard procedure and probably the best practice.
