Are there any strategies to limit mositure build-up in walk-in coolers?

First use refrigerant not glycol to cool room. Use de-humidifier. See that door seals are good to prevent moist air from entering.
Frequently check that blower's condensate drain line is not plugged, and ideally grains outside room not just draining to floor.
