Recently purchased a used 3BBL DME compact system and need a copy of design/layout drawings or pictures of a like system in operation. Any help would be a great help.

Do you have any pictures?
Send me a PM with your address and I'll mail them to you. Is your brewery going to be in Spotsylvania? We sell beer in that area through Specialty Beverage.
The DME 3 bbl. systems go together fairly intuitively once you get a couple of the larger sections of piping installed.

I have attempted to contact Sophisticated Otter numerous times for their brewing manual and any other data they might have had without success. The whole transaction through Ager was a total nightmare, so there is no help there.

Coincidentally, I've brewed on that system. The NASCAR lovin' owners of SO had hired a local (Johnson City, TN) homebrewer as their "brewmaster". He was able to get all the fermenters full but quit prior to racking the beers for sale. I got called in by DME to go down, rack all the beers, refill them and train their new "brewmaster" in three days. The good news is the system worked very well and we did a crushing brew schedule of back-to-back-to-back brews. This was with in a week of the official opening. The bad news is, there is no manual per se. There is the layout, an installation guide for the contractors and not much more.

What Happened to DME?
Why aren't they helping you?
I just bought an old 10bbl system of theirs...should I not expect some info if I need it?
I installed 2 systems for them many moons ago in Carlsbad and SD, and my memory of them was as a stand up outfit.

DME is as stand-up as they come. I worked for/with those guys for years. I'll bet no one has contacted them directly. I would contact Kenny Sampson, DME's engineer.

I have also worked with DME often during the last 10+ years--including recently--and can highly recommend them as a totally stand-up organization. You really can't ask more of a team than they deliver. They will help you if you ask. That being said, their breweries are very simple/intuitive to put together and you should be fine with a few hour's worth of looking around and moving things until they fit. Good luck!

I am glad you were able to track down the DME specs and I am sorry I couldn't source them for you. Many of the new equipment manufacturers will not provide documentation to a used equipment dealer like myself as is is often seen as a conflict of interest. Thanks to David for being able to help. Steve, my offer stands - after a 1-1/2 years and you still haven't installed the brewery? I will be happy to buy it back for the sale price.

Among several DME systems I've brewed on, one was a 5-BBL. The only pain about brewing on it was that it only made 5 BBL. Otherwise, its a great piece of kit. Incidentally, with a tiny modification I could mash-in on that system while knocking out. And--believe it or not--I once brewed with it 8 times in 3 days with absolutely no assistance. I'd say to go for it. It's a great system. Also interested what anyone's problems are with a similar system? I can't imagine.

DME had not brought out the 5 bbl. while I still worked for them. I was able to do the same type brew schedule on the three though. Seems every time I was on-site the grand opening loomed. Can you imagine a brewery being behind schedule?
I never really considered brewing or CIPing a pain in the ass as the other Dave suggested but, I only brewed 25 or so batches on three different 3 bbl. systems as part of commissioning. Every schedule was flat out power brewing though; at Egan Brewing in DePere, WI, the brewer & I brewed for a 24 hour period and filled all 6 fermenters.

What I mean about being a pain in the ass is you have to move everything around. Without having a Hot liquor tank you have to move all your water to clean and rinse with very carefully. The electric heater is very slow to heat up water or wort and slows things down. Other than that it is a nice compact system. I can powerbrew 2 brews in a day, but 2 to 3 hours are wasted waiting for the wort and or water to heat up. I brew at another brewery as my full time job. We have a very manual Newlands 15bbl system and it seems very easy to run after brewing on the DME. If I was to set up the 3bbl again I would invest in a HLT.
