Dish-Bottom Fermenters

Can anyone tell me a little bit about dish bottom fermenters, pros, cons and suggestions for working with them. Is it difficult to pitch and harvest yeast with these fermenters?

There are no pros to dish bottom FVs.

If you are referring to dish bottom closed tanks, I think you will find a difficult time harvesting consistent yeast and thus consistent product.
