you can always start at a local community college-- get the general courses done first, then apply to UC-Davis or OSU with your associate degree.
check out their course prerequisites for the brewing majors, you will most likely need all basic science courses (math, chemistry, organic chemistry, physics) and maybe some engineering... all may be provided in your local community college.
so much cheaper!!!

You can also try majoring in microbio through your schools of choice, and when you're done then enrolling in the graduate brewing studies in Davis. You'll have to kick ass in the microbio, though, but it gives you another option. Try taking some basic food engineering courses, if offered, to get you some experience there.

I wasn't much of a fan of highschool either :) I did well in Uni to make up for it though...
I'd put in some science courses at a Community College or State University, then look at transfering as well...maybe get a 2 year degree before chasing down the beer angle, that way if it doesn't work out for you, you've got two years under your belt already and can easily transfer into a 4 year program of something else.
There is also the Siebel Institute in Chicago which hasn't been mentioned, they don't have the same type of program as Davis, but they do have a diploma course. I've taken some short courses there and have been very impressed.
Don't go there before 21 though...the sensory evaluation, master of beer styles, and other courses will be pretty useless for you if you can"t sample the stuff! :D
