Can you effectively force carbonate 2 or 4 sankeys at a time by hooking them up to a CO2 tank and regulator, setting them at a certain psi, and letting them sit until carbonated? can you achieve much consistany this way? Would it be ok to do this at ambient temps rather than under refridgeration?

I would just do one at a time, but they need to be cold. Push your Co2 into the spear and put a valve on the "gas" side and vent it slightly. At say 30 PSI, it should not take you more than 10-20 min per keg. Make sure you feel the Co2 bubbles rumbling the keg slightly as they come out of the spear.

I have done two at a time, and it was not a problem.

It is not a problem to do multiple kegs at the same time, as I have done upwards of 20 at a time. If you have the time, and do it cold, takes less than a week to reach equilibrium.
One thing to look out for is backflow of beer into your gas lines when doing multiple kegs...we have non return valves on all of our gas disconnects (Cornies)....not sure if that is built into a Sankey coupler or not...
