Who are "the big guys"? Hop suppliers or other larger breweries?
Hop suppliers are very limited right now and trying to fill contracts. Unfortunaetly I can't help you, but I know someone nearby will be able to. As far as the future, get through this year, but get a contract signed for the next harvest ASAP. They've started offering them already.
I feel for people, like you, who had unfortunate timing with supplies and opening.

It's the exact same thing for us.

The brewery is not totally installed yet and the raw material becomes not available.

If somebody want to share his over-stock, it will be more than appreciate.
