We've been having a layer of floating trub forming on top of our wort before knockout. We WP for ~15 minutes, then rest for ~1/2 hr. Saw other thread on trub - are we resting for too long?

Are you using any kind of Whirlfloc or Protofloc? I have seen this when I have used it in excess. I call them Protien cakes. Usually they sink by the time I am done knocking out the wort.
There are those who rest for a while like you and then there are those who dont like me.
I whirlpool for about 2 mins and rest for about 10-15 mins.

Hey Mike -
We don't use anything like that. Now that I'm thinking though, we do add silan (date honey) during the WP. I'm wondering if there are proteins in the silan that somehow float to the surface - they would have missed the hotbreak if added in the WP. We'll see next time we brew without the date honey.

As a control: Have you tried mixing some of the silan with hot water (boiling?) in a bucket or pitcher to determine if you get floaters?
